Carrot-Oatmeal

Breakfast Bowl 1

What better breakfast is there than a warm bowl of grains, topped with fruit? It keeps you going a long while, provides you with energy and gently starts your digestion. Of course there are thousands ways of creating such a breakfast bowl. Here is a version I really like because it contains both fruits and vegetable, it is done in 5-10 minutes (depending on your morning condition) and it doesn’t need added sugar.


For one bowl you need:

  • 50 g rolled oats
  • 1 1/2 tbsp wheat bran
  • 1 tbsp ground flaxseeds
  • 1 medium carrot
  • a small handful of raisins
  • 150-200 ml oat milk (or any plant milk)
  • 1/4 tsp cardamom
  • 1/4 tsp cinnamon
  • 1 pinch of salt
  • 1 apple

Ingredients

In a small saucepan combine oats, wheat bran, flaxseeds, raisins, spices and salt. Grate the carrot finely into the saucepan and add the oat milk. Bring to a boil, then let it simmer until the liquid is absorbed. Occasionally give it a stir. The carrot will give it a warm colour and a more exciting texture, the raisins add extra sweetness to it and the wheat bran and flaxseeds contain fibres.

Cut the apple into thin slices. Transfer the oatmeal to a bowl, pour a little more oat milk around and garnish with the apple.

That was quick.
