Quinoa Breakfast Bowl

Christmas cookies, chocolate treats, creamy sauces, big flavours, mouthwatering smells from the kitchen day after day, leftovers from every meal, fizzy drinks, decadent recipes, luxurious ingredients, indulgence and traditions. A marathon of good food, of delicious food. The same procedure as every year. And only one big evening left and then it’s 2016 – time to go back to daily life with our freshly made resolutions about food, about work, about our whole lives. I am not sure about great resolutions – I feel it’s always hard to meet them and extremely disencouraging if you don’t…but maybe I haven’t made the right resolutions yet. Anyway, no matter if you are planning on some new year’s resolutions or not – a proper breakfast as a good start and a motivation boost can’t be wrong. So here’s a suggestion packed with nutrients & vitamins.

Quinoa looks like cereal but it isn’t, consequently it’s suited for a gluten free diet. It contains a high amount of protein and is rich in magnesium and iron, so if you are a vegan or vegetarian quinoa should be on your menu from time to time. Ginger is said to stimulate the immune system, pomegranate provides you with antioxidants and dates function as sweetener plus they are rich in potassium, calcium and B-vitamins. A perfect mix to start a new day and a new year.

For 2 small portions or one really hungry person you need:

  • 70 g or half a cup of quinoa
  • 150 ml/ a cup oat milk (or any other plant milk)
  • a thumb-sized piece of ginger
  • half a lemon
  • 5 dates
  • 1 banana
  • about a quarter of a pomegranate

Grate the ginger finely and start to cook the quinoa in oat milk. Chop the dates and add to the pan. Let cook for about 20 minutes until the quinoa is soft – some of the little white stringy bits will have come apart by that time. Meanwhile slice the banana and peel the pomegranate. Be really slow and careful here – otherwise your kitchen will look like a crime scene. Squeeze the lemon and when the quinoa is cooked pour the citrus juice over it and stir until mixed. Decorate with banana and pomegranate and enjoy! Of course you can add more fruit if you like.
